Meleah OK for nut yogurt to ferment 12.5 hours? I didn't get my almond milk yogurt started in the yogurt machine until 6pm today. If I let it ferment for exactly 8 hours, I would have to set my alarm for 2am to pull it out of the machine and move it to the refrigerator. Would it be OK to let it ferment all night until 6:30 tomorrow morning (that would be 12.5 hours total)? If not, would it turn out OK if I move it to the fridge when I go to bed at midnight tonight (after it has onky fermented for 6 hours)? My only concern on leaving it for over 12 hours is that the bacteria *might* not have enough to eat in that period of time.... because all they have to sustain them is the amount of honey you're added, which is based on a recipe that calls for 8 hrs. I assume it's not really an exact science, though.... and there probably are still plenty of " live ones " left in this yogurt. I would go ahead and use it, and just work on my timing for next batch. Guest guest Posted March 5, 2007 Report Share Posted March 5, 2007 I ended up waking up at 3:15am and moved the yogurt to the fridge at that time, so it only fermented for 9 hours and 15 minutes. I was very disappointed this afternoon to find that the almond yogurt was very liquid with no solid material at all. Would I get any benefit at all from drinking this stuff, or did it not turn out right at all since it is pure liquid? I have had the worst luck trying to make almond and coconut yogurt and can't seem to get it to turn out right at all. I even bought the SoyQuick Nutmilk maker in hopes that the milk and yogurt would turn out right using that machine instead of my Vitamix to make the nut milk. If there's anyone out there who is successfully using the SoyQuick Nutmilk machine to make almond milk and then almond yogurt, I'd love to hear how you're doing it. Thanks! > > No....
