Guest guest Posted January 18, 2007 Report Share Posted January 18, 2007 My son's birthday is this weekend and he is only a few days into SCD but I am going to allow him a small infraction. He LOVES chocolate cupcakes and i am trying to modify his favorite recipe so that the only infraction would be the cocoa powder. The recipe calls for 1 3/4 cups white flour--I used almond flour instead and replaced the buttermilk called for with SCD homemade yogurt. The cupcakes taste fine but collapsed in the middle and did not fully cook--they were almost fudgy, like molten chocolate in the middle. I am wondering if there are any SCD bakers out there with lots of experience who can help me out. Here is the original cupcake recipe: 1 cup coffee 1 3/4 cups all purpose flour ( I used equal amount almond flour) 2 cups sugar ( I used equal amount of honey) 3/4 cup unsweetened cocoa powder 2 tsp baking soda 1 tsp baking powder (probably no need for this with SCD) 1 tsp salt 1 cup lowfat buttermilk 1/2 cup egg substitute (I used 2 eggs since 1/4 Eggbeaters=1 egg) 1/3 cup vegetable oil 1 tsp vanilla extract I need to make this cake/cupcakes either tomorrow or early Saturday so hopefully someone can come to my rescue very soon!! Thank you all in advance for any help. P.S. I do realize that this recipe is not for someone starting out on the SCD as it is probably not too easy to digest. I just want to have it for his birthday and then I will not make it again or serve it again until he is better able to handle it.
