Guest guest Posted November 17, 2004 Report Share Posted November 17, 2004 Here's my favorite: Loaded Brownies 1 pkg low-fat brownie mix 1 (10 oz) pkg miniature marshmallows 1/2 lb caramels 1/4 cup evaporated skimmed milk (canned) Chocolate Topping (recipe below) Preheat oven to 350 degrees. Prepare brownies according to box directions and pour into a 13 x 9 x 2 inch baking dish coated with nonstick cooking spray and dusted with flour. Bake for 20 to 25 minutes. Do not overcook. When done, top with the marshmallows and return to the oven for 3 to 5 minutes longer, or until the marshmallows are soft. Watch carefully. In a small microwaveproof bowl, heat the caramels and the evaporated milk in the microwave for 1 minutes; stir and heat 1 minutes longer or until the mixture is smooth. Drizzle the caramel mixture over the marshmallows. Drizzle with warm Chocolate Topping. Chocolate Topping 1/2 cup sugar 1/3 cup cocoa 1 1/2 tblspoon cornstarch 2/3 cup skim milk (not the evaporated used above) 1 tspoon vanilla extract In a small saucepan, combine the sugar, cocoa and cornstarch. Gradually add the milk, stirring until well blended. Bring this mixture to a boil over medium heat and cook for 1 minute, stirring constantly. Remove from heat and add the vanilla. *** Last time I made this, the brownies were not coooked enough and I had to spoon everything out and serve as globs. Still tasted good - but looked awful. So while the recipe says " do not overcook " be sure it is cooked enough. Also, it's a low-fat recipe if you only eat a small chunk - not if you eat the entire pan! Give them away and earn points with your mail carrier, neighbors or whoever. Or it freezes beautifully - just make sure you put small portions in each package you freeze and don't pig out. I'm eating devils food cookies in between words so it's taking a little longer to get this written. > Those recipes sound good. don't they make a microwave version?
