Guest guest Posted February 26, 2007 Report Share Posted February 26, 2007 hi joan, avocado and butternut are two of our mainstays. here's the way we do it. we're still in stage 1 or 2 foods. avocado & chicken salad: pick one that is soft. cut open and dice. peel off the skin. mix with chunks of roasted or boiled chicken. sprinkle with lemon juice. my daughter also loves to just eat avocado plain, straight with a spoon. butternut squash fries: preheat oven to 425F. slice squash in half lengthwise. peel one half and save the other half for another day. scoop seeds and pulp out with an ice cream scooper and discard. with cut side down, slice squash into half moons, about 1/4 inch thick. toss with oil and place on parchment paper on a baking sheet. bake for 20 minutes, then flip each one over. bake an additional 20 minutes. serve with homemade ketchup. they don't come out crispy like french fries, but they down brown nicely and taste great. silvia SCD 7 weeks daughter with eczema & food intolerances > These are two items that I've never used in my cooking before. > > Can anyone tell me how to prepare a butternut squash - and how to cook > it? > > Can someone share the recipe for squash buttons? > > What do I do with an avocado? I found this on the internet somewhere: to avoid having to cut the squash and to concentrate the sweet taste, bake whole squash on a dry baking sheet at 400 or 450 degrees until completely soft when pierced with a small knife, about an hour. Peel, seed I make this recipe without raisins for breakfast: http://www.scdrecipe.com/recipes/r_056_00281.php I know what you mean about avocados--strange things I didn't grow up with. ;-) Buy avocados when they are not soft. Keep feeling them at home and when they give just a little on the stem end they are ready. If you let them get softer, they will probably be stringy and brown inside. Guest guest Posted February 26, 2007 Report Share Posted February 26, 2007 Amber, You cut the squash in half length wise and scoop out the seeds (like a pumpkin) and then bake in a 375 degree oven upside down until you can put a knife through the skin.
