(There is an associated recipe for Napoleons, if you're interested.) PUFF PASTRY 1/2 c. Water1/4 c. Butter1/4 tsp. Pure Vanilla1/8 tsp. Salt7 Tbs. White Rice Flour2 lg. Eggs In a saucepan, bring Water, Butter, Vanilla and Salt to a gentle boil. Stir in Rice Flour all at once and stir until mixture is a smooth ball. Remove from heat and cool 5 minutes. Add Eggs, one at a time, beating to a smooth dough between each addition. For 'Cream Puffs', use two teaspoons and shape into egg sized balls. For 'Éclairs' use a pastry bag and pipe into 4" logs onto a parchment lined baking sheet, making sure to leave plenty of room between each. Bake at 375 F for about 30 min. Two professional bakers on the site say they haven't been able to create them satisfactorily. However, in Paris, Valiform? cranks out very good ones. Also, Shaer flour used to have a recipe in a booklet, but no one seems to find it now, and it didn't seem to work well anyway. I don't know if they make any distribution in the U.S. (they are much bigger than ValpiForm) but if you are really interested, a check at www.schaer.com is worth a look. Schaer's subsidiary, DS Food also makes croissants (with apple filling) but they are frozen...
