Hi, , Try reading the list at http://health.groups.yahoo.com/group/pecanbread/messages and type in " frosting " in the search box. I think there were a couple of white frosting ideas posted a few weeks ago. I didn't keep them because we are happy with a mix of cashew butter, honey and vanilla, whipped up with a bit of coconut oil. It's not white white but we like it. I couldn't find another one that I was looking for, but I know that Carol did a reply to this one saying that coconut flour would be really good in this, and that it is like using sugar. I don't know the proportions for that though, and remember that coconut flour is an advanced food. So, don't use that if you're fairly new to SCD. Meleah Hi all I have been stressing about making white frosting for my son's birthday cake and I actually made some this morning. I thought I would share the recipe: 1/2 cup of Spectrum shortening 1/4 plus 2 tbsp honey 1 tsp vanilla 1 tsp cashew nut butter (optional, gives a better texture) Add ingredients together in food processor and blend a minute or two until well mixed. It comes out light and fluffy and WHITE! You could add coloring or maybe change the flavor up a bit with different things. Hope this helps some of you with the birthday cake dilemma! Guest guest Posted February 20, 2007 Report Share Posted February 20, 2007 Seven Minute Frosting 3 egg whites 2/3 cup honey 1 tsp vanilla Place egg whites and honey in top of double boiler over hot, but not boiling, water. Beat with a rotary beater, or an electric beater at low speed while water comes to a boil. Increase speed to high speed, and continue to beat for 7 minutes, or until mixture forms soft peaks. Remove from heat, add vanilla slowly, and continue beating until frosting is stiff enough to hold its shape.
