Guest guest Posted January 18, 2007 Report Share Posted January 18, 2007 , I first cut the top and bottom off of the butternut squash so that all I am working with is the long neck part. I found that I can peel it pretty easily with a potato peeler. I then cut it into several circles, then cut those circles in half and then cut into whatever size pieces after that. It takes some time, but my boys love the squash fries. That is the only veggie they will eat that I do not have to hide in something. Hope this helps.
