Pasteurization in the honey industry is a process that kills sugar tolerant

yeasts in order to

extend the shelf life.

Actually, you can use raw honey if you want to ...... it's legal. It must be

FILTERED honey, though. Unfiltered honey has pollen grains in it that can

irritate the gut. So, look for CLEAR, filtered honey.
