Guest guest
I'm about to make zucchini squash pickles for my hubby. He's still at the stage where he needs everything peeled, seeded, and cooked. I'm planning on peeling the squash, but not seeding them since they are very small. If the seeds end up bothering him, then we'll seed them before he eats them. My question is, do I need to cook the squash, then pickle them, or will it be cooked enough by the canning process or softened by the pickling? Thanks. Any other tips are appreciated since I've never pickled anything before. -Sharon wife of Adam- Crohn's 2004, SCD since June 2006
