Do Kitchen Basics contain ingredients which can trigger a reaction in those people with food allergies? While no food can be guaranteed to be safe from causing an allergic reaction in 100% of the population, Kitchen Basics Stocks are all natural and do not contain many of the ingredients which cause food allergies. Kitchen Basics Chicken Stock is slow cooked from or with: Chicken bones Carrots, onion, celery Natural flavor—protein without artificial additives Bay leaf, thyme and peppercorn Honey and salt Kitchen Basics Beef Flavor Stock is slow cooked from or with: Beef bones Carrots, onion, leek, tomato and garlic Natural flavor—protein without artificial additives Bay leaf, thyme and peppercorn Honey and salt Kitchen Basics Stocks do not contain: MSG (monosodium glutamate) HVP (hydrolyzed vegetable protein) Disodium inosinate or guanylate Yeast extract Yeast Soy Milk, whey, caseine or caseinates Wheat, oats, rye, barley 2. What is the shelf life of the product? Unopened, the product is good indefinitely. The carton provides a long-lasting barrier to spoilage, sometimes lasting years with little loss in flavor. Should the product be exposed to the air at room temperature for a few hours (carton opened or accidentally dropped and a seal broken), the product inside will ferment and produce a bad odor. In many cases, the carton will swell from top to bottom. Unfortunately, product code dates are of little use in determining whether or not the product is good. To be safe, make sure the carton is not swelled, smell the product before pouring it out, and always bring your recipes to a boil to render the food safe. Once opened, the product is generally good for about 10 days. However, this may range from 1 to 3 weeks. Again, it is best to smell the product before using it and boil all recipes. 3. How do I use Kitchen Basics? In any recipe calling for stock or broth, replace the amount called for with Kitchen Basics. Pour straight from the carton; no need to add water. To add flavor to rice, risotto, cous-cous, potatoes and noodles, cook in Kitchen Basics instead of water. A simple yet winning application is to put a chicken or roast in a large covered oven dish, cut up and add vegetables like potatoes, carrots, and onions, then pour a 12 oz. carton of Kitchen Basics over the food; cook at 375 degrees F for 1 1/2 hours. 4. Can Kitchen Basics Stocks be used on a diabetic diet? While you should always consult your doctor or dietitian, Kitchen Basics Stocks, at less than 1 gram of total sugars per serving, represents only a small fraction of the recommended daily allowance of sugar. Several diabetic clinics recommend Kitchen Basics as a basic ingredient in the diabetic diet. 5. Why do you use honey? While homemade stocks do not normally contain honey, we use a very small amount for safety reasons. If for any reason the carton should be damaged or opened and product is exposed, the honey enhances a natural fermentation process that, while not harmful in and of itself, will make the product smell bad and discourage usage. Manufacters are allowed to add all kinds of things under the " natural flavor " heading that we cannot use on SCD. You would have to find out EXACTLY what this " natural flavor-protein " is. It's really sad and frustrating when someone isn't making good progress and then we finally uncover one little TEENY bit of something illegal in one product they were using, unknowingly undermining all their hard work!
