I contacted them via email and this is what they said. Hello, our cheese is a dry curd cheese, nothing added after cooking and culturing, nothing. The cultures that are added do not include bifido or bifido strains. I didn't notice the label listing sugar though so that's slightly concerning. I did contact them and here's what they said:Yes our farmers cheese is perfect for the SCD as we get many requests about it We do not add anything to the cheese after it is made. Not sure why other brands say 0, that’s not really possible as all cheese inherently has some lactose in it at the time of processing, even though it is removed when its finished.
