Hi!

Its not the fat that make cholesterol rise, its the carbs ;) Have you seen fat

head the movie? Its a very good explanation there. See here:

The biggest problems with fat is that its hard to digest.

If you are doing fine with the amount you eat I don't see any reason to eat

less. If you are loosing weigth you should eat more ;)

scrape off any of that white hardened fat after the chicken stock/broth has

cooled down in the fridge, and I broth/stock 3-4 times a day. I'm in my 28th day

of the SCD (YAY!!!) and I am about 14% body fat... under the healthy range. I

have always been this way, but funny this, I have had gut issues for ~12 years!

(all my adult life so far!!).... go figure- excuse the pun!!

You're eating good fats. And there's an immense amount of misinformation out there about the nasty things that eating fat supposedly does to you -- almost all of it untrue. Should I decrease my animal fats in the broth? Or butter?

Cholestrol levels have always sat at about 4-5 for me, so it's not a

problem before starting the diet.

Fat has been demonized. If you're using healthy fats, it's not an

issue.

By the way, QUARK is not dry curd cottage cheese and is not SCD

legal.
