Lately I LOVE taking a couple handfuls of skinny green beans (the skinnier they are, usually means the smaller the seeds too) and toss them in olive oil, salt & pepper. Crushed garlic is tasty too. Then cook them on a cookie sheet at 400*F for 30 minutes (check on them after 20 minutes). They are as tasty as french fries. I like it when they get super limp, and a tad bit browned. Wow Thank you so much - I never thought of buying the skinnier green beans to get smaller seeds - Ingenious!!I will definitely give them a go. I got the idea from remembering eating " dry salted string

beans " at Chinese Food Restaurants (years ago, preSCD).

And of course, the thought occurs to me to cook them as you suggest, and

then dry them to make a crispy snack!
