I do take out the big bean seeds, but only because my bird considers them a delicacy. If they don't bother you, eat away! However, if they do bother you, you can buy frozen french green beans that already are sliced and de-seeded. Well, green beans can be purchased Frenched in the US. (Fresh Frozen.) For myself, I could slice the beans and cook them, but I didn't find that I needed to be removing every seed. If you have issues with the seeds, though, you might consider it. All in what you tolerate -- some people do better with french-cut. Lately I LOVE taking a couple handfuls of skinny green beans (the skinnier they are, usually means the smaller the seeds too) and toss them in olive oil, salt & pepper. Crushed garlic is tasty too. Then cook them on a cookie sheet at 400*F for 30 minutes (check on them after 20 minutes). They are as tasty as french fries. I like it when they get super limp, and a tad bit browned. I got the idea from remembering eating " dry salted string beans " at Chinese Food Restaurants (years ago, preSCD).
