Something eggy like flan instead without the dccc? Guest guest Posted October 3, 2010 Report Share Posted October 3, 2010 Hi there- I have been making 2 kinds of " patty's " lately that a great for on the go. 1: sweet-- Baked squash mixed with egg, vanilla extract, honey ( not necessary), cinnamon, and salt. Then I bake them in dollops on a cookie sheet at 350 until golden brown. 2: savory-- put spinach, onion or broccoli, asparagus, mushroom, zucchini ( whatever veg you can tolerate) in a food processor until mushy. Add egg, salt and pepper. Bake the same way as the squash ones. If you are tying to gain weight could also add oil to either of these or almond flour. I have also added a bit of pecan butter to the squash ones which is really yummy or I also added shredded coconut but that was too advanced for me so I took it out for now. I put these in ziplocks and carry with me for a snack or small meal. Great because they are light to carry in your bag and can last all day without refrigeration.
