No commercial bean flour is permitted on SCD because the beans will not

have been properly soaked before being made into flour.

The only legumes mentioned are lima beans, navy pea beans, split peas,

and lentils. (Black beans are advanced.)

Thanks for the info. I'm interested in the SCD for adrenal fatigue--one week in and results seem good, but what a diet change!

I bought mesquite flour in Arizona on a vacation and have kept it in my freezer. The baked products have a good flavor, and I hated to throw the flour away. Hoping mesquite was an OK SCD item, I registered w/this Yahoo group and received 87 replies on other SCD and beyond subjects. Yours was the only direct response to my question.

Does dry bean soaking remove complex starch(es)? Again, thanks. Barbara

Barbara,

This is a very busy list. <smile> And we get comments on all manner

of subjects. In theory, we are supposed to change the subject headers

when the topic changes, but in practice, people forget. You get pretty

adept, after awhile, at skimming messages to see if they contain anything

of interest to you.

It would take quite a bit of research on mesquite beans to see if they

could possibly be legal. I do know they are not among the beans

recommended by Elaine Gottschall.

I have made lentil bread, and it, too, had a good taste to it, so I can

understand your wanting to be able to use it.

Soaking the dry beans removes some of the complex starches, and then

cooking them and draining them removes more. Beans are pretty advanced

foods because of this, but are better tolerated than other food items

which have some complex carbs without (like grains and potatoes) being

mostly complex carbs.

I'd say to keep the flour in your freezer until significant healing has

taken place. They may be a non-SCD food you can add in after healing.
