That place sounds really interesting--thanks for sending. I'll have to check it out next time I'm in the twin cities.

Balsamic vinegar

I was in a shop the other day called The Olive Grove (theolivegroveoliveoil.com). It's in Mendota Heights mn. I was talking with the woman about balsamic vinegar and she had one with no sugar in it. I think it was around $19/bottle. I know I saw a post recently where it was stated that true balsamic vinegar is $200/ounce. I just talked with the woman again and asked her that and she said they sell vinegar and slap on ridiculous prices. I can say that this was the best vinegar I have ever had. And the olive oil was phenomenal.

How do you know that there is no sugar in the balsamic vinegar? I thought the

sugar was integral to the way balsamic is fermented. I would love to be able to

buy balsamic and use it again! Judy

I explained to the owner that I couldn't eat any sugar and she said here wasn't any in the kind I bought. Maybe I'm taking a leap of faith and trusting her. UC-C 12/09SCD 1/10Daily, CLO, Magnesium, bromelain, acidophilus Mom of 2 crazy monkeys :-)

How do you know that there is no sugar in the balsamic vinegar? I thought the sugar was integral to the way balsamic is fermented. I would love to be able to buy balsamic and use it again! Judy

No, sugar is used in cheap versions because it's not nearly as

time-consuming, and thus more " cost effective. "

The best quality balsamic vinegar uses only grape must (i.e., the entire

grape: skins, " meat " /juic, seeds) and then ferments the must in a

controlled manner.
