I hate to tell you how much I was relying on this in the initial month... have basically stopped eating it now, as it makes me feel sick =( a blessing in disguise by the souns of it!! Quark is a type of fresh cheese, also known as tvorog, topfen, etc. It is made by warming soured milk until the desired degree of denaturation of milk proteins and then strained. Quark is not legal because it is an acid-based cheese which does not use a bacterial culture to remove the lactose from the milk.
