I just made some ebelskivers with almond flour and stuffed them with beans, ground chicken, and squash. They're my portable meals. I even made some with berries so I'd have some dessert. You could stuff them with pecan butter and homemade jelly. Or you could grind up meat and veggies. I can't eat any dairy but cheese would Be good too. Hope some of those ideas inspire you. I tried to make the comfy belly donut recipe with shredded coconut tonight (which is how I bake everything), but they didn't come out too well - pretty much tasted like hot coconut macaroons. Then I tried using the banana pancake recipe since those usually come out looking like pancakes, but they fell apart in the aebleskiver pan. I am not much of a cook, so I have no idea what I can try next to get them to bind better without using flour, but I plan to experiment some more. I made my first batch of bean flour (which made it into their soaked buttermilk pancakes) and my first "surprise" smoothy for the fam. It had spinach, orange, avocado, blueberries and yogurt. Thank you I don't actually use bean flour because it's too much trouble. I soak, drain, then cook the beans, then drain again and rinse, and then use the fine grind plate on my Maverick to produce bean paste. I can freeze lumps of bean paste so I don't have to cook beans every time. I then make the recipe with the bean paste, and modify the amount of liquid in the recipe to account for that in the paste. If you were making bean flour, you'd have to soak, drain, then cook the beans, then drain again and rinse. It blends everything so completely.
