Re:Mayo recipe calls for sitting on counter for 7 hrs

Didn't a similar recipe (or idea) go by awhile back? Seems like I

remember someone said that with the whey in it and a few hours on the

counter it ferments a bit and the mayo lasts a lot longer. Am I

remembering right?

I have recipes from the group for mayo but none of them had

instructions like these. I know we'd change the succanat to honey but has

anyone seen instructions foe letting it sit on the counter for so long???

Enzyme-Rich Mayonnaise

2 eggs (from pastured hens) at room temperature

1 tsp sucanat (optional)

1 tsp raw, unpastuerized apple cider vinegar

1/2 C cold-pressed, uv-protected olive oil

1/2 C warm coconut oil

1 tsp whey

salt & paprika to taste

Put 1 egg and the yolk of the other in your blender, along with

sucanat, cider vinegar, & whey. Whirl around for 30 seconds or until

nice and frothy. Slowly add in olive oil, followed by coconut oil. Add

salt and paprika to taste. Transfer to a small, pint sized jar and close

the lid tightly. Leave on your counter for 7-12 hours then transfer to

the refrigerator.

Yes, I think I was the one who said it (maybe others too?). Sally Fallon's recipe for mayo includes whey, and she says to let it sit at room temp for 7 hours before transfering to the fridge.I made my last batch of mayo this way and it turned out fine.

Any mayo recipe can be made with whey or without. I find adding whey does make it keep longer in the fridge so I do that method. I add 1 tbsp whey per 1 cup mayo, and let it sit on the counter 7 hours then refrigerate.

Whey dripped from SCD legal yogurt is legal. From coconut or nut yogurt I'm sure it would work as well.Kathttp://scdkat.com

 

But is whey legal? Could you leave it out without the whey?

Commercial whey is not legal. The " whey " being referred to here

is the drippings from SCD yogurt.

I would not recommend leaving the mayo out without it any more than I

would generally recommend leaving any food out without refrigeration. I'm

not fanatical about it, but my preference if to be careful.
