Guest guest Posted September 19, 2010 Report Share Posted September 19, 2010 Hi , I make bread crumbs by cubing up a small loaf of Lois Lang Bread (recipe can be found in BTVC) and then I place them in the dehydrator and dry them out until crisp. They can also be dried out in the oven, set at a low temp. I generally use the bread crumbs to make stuffing. I also divvy up the bread recipe into 3 very small loaf pans and they take less time to bake. I have made chicken parmesan without bread crumbs. I use equal parts of almond flour & parmesan with some salt & dried oregano and/or basil. Dredge the chicken pieces in a beaten egg & then coat with the almond flour/parm. Arrange chicken in a baking dish and sprinkle any remaining mixture over the chicken and then bake. I was trying shortbread cookies, with almond flour, butter, and honey. Without an egg I don't think almond flour will hold together! So as cookies it wasn't a success, but I think if you eliminated the honey and put butter or whatever oil you like in with the almond flour, and bake it you'd probably have crumbs you could use with your chicken recipe.
