Bread crumbs

How do you make bread crumbs? Sometimes I just add some almond flour but I'm

sure there's a better way. I'd like to make chicken parm.

Hi ,

I make bread crumbs by cubing up a small loaf of Lois Lang Bread

(recipe can be found in BTVC) and then I place them in the dehydrator and dry

them out until crisp. They can also be dried out in the oven, set at a low

temp. I generally use the bread crumbs to make stuffing. I also divvy up the

bread recipe into 3 very small loaf pans and they take less time to bake.

I have made chicken parmesan without bread crumbs. I use equal

parts of almond flour & parmesan with some salt & dried oregano and/or

basil. Dredge the chicken pieces in a beaten egg & then coat with the

almond flour/parm.

Arrange chicken in a baking dish and sprinkle any remaining

mixture over the chicken and then bake.

I made cookie crumbs this time last year before I had eggs. I was

trying shortbread cookies, with almond flour, butter, and honey.

Without an egg I don't think almond flour will hold together! So as

cookies it wasn't a success, but I think if you eliminated the honey and

put butter or whatever oil you like in with the almond flour, and bake it

you'd probably have crumbs you could use with your chicken recipe. You

might even add some parmesan to this.

That's pretty close to how we've been making chicken parmesan, except we only

use an egg white (I can't remember why), and use pecan flour. Very tasty!

Thanks! For the most part I don't miss wheat except my pizza crust and artisanal bread I still make my family. Using these breadcrumbs will help me make a yummy dish and get out of my rut. :-)UC-C 12/09SCD 1/10Daily, CLO, Magnesium, bromelain, acidophilus Mom of 2 crazy monkeys :-)
