Guest guest Posted September 16, 2010 Report Share Posted September 16, 2010 Hi Terry, I am not baking yet but will just caution you with the coconut flour to look for recipes designed for it as it doesn't sub correctly from nut flour recipes. The coconut cream I'm kind of ashamed to admit, I generally just eat with a spoon. You can use it to make coconut milk if you want, be easiest in the blender, I think. Also, the first time I got it I thought it was weird with coconut oil on top and brick-hard coconut on the bottom Then I read or saw a video on TT on dealing with it. It separates in shipping. You need to get a deep enough pan to put very warm water in and submerge the jar of coconut cream pretty well up to the top of it (but not to the lid to get moisture inside). Leave (and change water if necessary) until it's soft enough to mix the coconut oil with the harder stuff below it. TT claims now it's spoonable. Well, maybe where they live! It's still pretty hard here but at least I can dig it, and don't need an ax to get it out. Well it's been over 2 years on SCD and I finally bought my first coconut flour and coconut cream from Tropical Traditions. I have no clue what to do with it. I know there have been recipes posted here and I know Elana has a bunch, but does anyone have a favorite they'd like to share with me? Thanks.
