The problem with shelled and roasted nuts is that the manufacturers very often add starch or sugar to the salt and/or flavoring mixture when they put it on the nuts. Dry roasted nuts are particularly dangerous in this respect. If they are raw and blanched and have nothing on them, yes, you could, indeed, roast them yourself. Blanched peanuts are usually OK, but it also depends on the processor. My rule of thumb is to read labels carefully, sometimes talk to the processor to ensure nothing illegal is included in the processing and packaging. I make my own peanut butter, so I've experimented with using different types of peanuts -- roasted, raw, blanched -- shelled and unshelled. When I'm in doubt about the processor, I purchase roasted in the shell, and then deal with shelling and removing most of the skins. I just don't trust a blanched peanut made by someone else; it is too easy for them to add something to the processing. Probably my own paranoia! It is easy to roast peanuts, but I don't mind skipping a step [grin]. Most of the time I purchase roasted and shelled peanuts from a processor I've talked to, either locally (I live in the south surrounded by peanut fields) or in a nearby state. My digestion will tolerate some skins in the peanut butter, so I don't spend a lot of time fussing; and besides the grinding will chop the skins very fine. Kim M. Shelled peanuts very often have starches or sugars added when they add the salt -- or when they leave out the salt!
