Current me: Global Carb and Fungal Problems well-controlled past 30 yr. by extremely low-carb, no dairy, no grains allergy/anti-yeast diet, SCD 01/05. After 35 yrs. no need for allergy shots since SCD! This evening I looked at the label and it states that is is firm ripened cheese. I searched 'firm ripened' on the net and found out that cheese like Cheddar and Swiss are firm ripened cheese. Mozzarella is a firm unripened cheese. I hope that Friulano is legal because it is my opinion (and my family's)that it is a better substitute for mozzarella in pizza, lasanga etc. If it can be used in SCD cooking - it would make my day!
