I think I found a soy sauce substitute that can be used on the diet. I called the company and they assured me they use nothing in the processing. This is simply coconut sap that is allowed to ferment (it happens naturally as soon as it is taken from the tree). It is heated to a modest temperature to keep it from fermenting into vinegar. Sun-dried mineral-rich sea salt is added for additional flavoring. Here's the website: www.coconutsecret.com. Has anyone heard of this? She is willing to send me an e-mail (not a paper letter-hope this is okay) confirming that nothing is used in processing or added (except the sea salt). She did say coconut sap is a pre-biotic with FOS, but I assume this occurs naturally, unlike the FOS (inulin) that is added to processed foods. They also have coconut cystals which

is the nectar evaporated down to a dry state. What do you think about that? Legal? Can someone help me word the e-mail if I do send it?Thank you! Husband on diet for 1 year,no meds, no symptoms

The coconut crystals would not be legal -- it's concentrated. People used

to ask about date sugar, which is dried ground up dates, and the answer

from Elaine was the same.

I wouldn't trust the coconut sap, unless you can determine what kinds of

carbs remain after it's fermented.

I've used ginger, garlic, and toasted sesame oil for nine years, and

don't miss soy sauce at all. I don't believe it is legal.
