Bunless cheeseburgers with steamed zucchini.

Remove one pound ground bison from freezer either the night before or

the morning of.

Peel four zucchini and slice into coins, dump into vegetable steamer.

Begin cooking. (15-20 minutes.)

Shape bison into two half-pound burgers and sprinkle lightly with black

pepper.

Pre-heat grill. Cook burgers (for medium rare) 2-3 minutes on a

side.

Put burger and a slice of cheese on each plate. Put a pile of cooked

zucchini on each plate -- can add butter, more cheese, a drizzle of olive

oil to the zukes. Serve.

Apart from defrosting time -- MAYBE 30 minutes. More likely 20.

Rotisserie chicken and chopped spinach.

Rotisserie or roasted chickens -- prepared ahead of time -- my oven

is big enough to cook about four chickens at once -- did it when serving

12 for my parents' 60th anniversary celebration in 2005. (I fed 12 for

dinner for five dinners, in addition to doing SCD foods for 3 SCDers for

the main party. Managed it on less than what 1 meal would have cost if we

ate out and it was much safer for the SCDers. Also did yogurt and

fruit-nut muffins for everyone's breakfasts.)

Place block of frozen chopped spinach in veggie steamer. Steam for 20

minutes. Meanwhile, quarter chicken and place 2 quarter on an oven tray

in the oven at 350 to heat. When spinach is done, drain and divide in two

portions. Serve with butter or olive oil. Add one-quarter chicken. Time:

about 20 minutes.

" Blackened " catfish with avocado slices

Brush catfish filets with olive. Sprinkle on one side with

" blackened " seafood seasoning. (Homemade, of course.) Preheat

grille. Peel and pit avocados... slice each quarter in three pieces on a

salad plate. Salt lightly, or serve with Hurricane Dressing. Lay catfish

fillets on grille and cook 8-10 minutes on a side. Serve with avocado.

Time: about 20 minutes.
