When spinach is done, drain and divide in two portions. Serve with butter or olive oil. Add one-quarter chicken. Time: about 20 minutes. " Blackened " catfish with avocado slices Brush catfish filets with olive. Sprinkle on one side with " blackened " seafood seasoning. (Homemade, of course.) Preheat grille. Peel and pit avocados... slice each quarter in three pieces on a salad plate. Salt lightly, or serve with Hurricane Dressing. Lay catfish fillets on grille and cook 8-10 minutes on a side. Serve with avocado.
