Soy lecithin is a fat derived from soy. I specifically asked Elaine about

it, and she said that it was legal. She did feel that lecithin derived

from egg was better quality than soy lecithin, but soy lecithin was

acceptable.

I have an anaphylactic reaction to most soy, but I tolerate lecithin,

apparently because it is an oil and does not contain any of the soy

protein..
