Hi all,

I have been on the diet for a little while. I got so sick of just veggies and

meats I decided to make a little desert yesterday. I am limiting honey and

sweets and almond flour due to candida.

I cooked 2 peeled apples and a small container of blueberries in a small skillet

with some water and a bit of coconut oil.

I then put the cooked fruit in a corning ware square pan and covered it with

almond flour, shredded coconut and some ghee on top.I mushed the mixture down

into the fruit. I then baked it for a while at 350.( I recently found out that I

can tolerate ghee.)It made the coconut nice and brown.

It was really yummy and even my husband who is not on SCD but can't have gluten

liked it. He put a tiny bit of honey on top of his.

Take care,

June
