New Eileen, I don't think you need to make yourself crazy about every little thing that gets mentioned.The other Eileen has a serious mold/yeast/fungus problem with entirely different symptomsthan your son - she had a lot of nausea, etc. Like I said before in a previous post, the stores seem to only sell sharp cheddar. What brand is labeled just cheddar?I don't know if you can find it near you, but Tilamook brand makes a medium cheddar. Other brands, too, if you look for it, make mild cheddar - some NY State and Wisconsin cheddars,for example. Ask in the cheese dep't of a local supermarket - or if you have a TJs or WFs near you,for sure, you can find it there. Mara, who likes cheddar the sharper the better.
