I am currently doing some research and attempting to start the diet. I understand the concept of the milk yogurt. However, I was a the store and picked up the Goat Kiefer...Can I use this instead? " Store-bought products will often have starch or sugar added under the cover of " natural flavors " or something like that. Also, canned goods often have sugar added without mentioning it on the label -- Breaking The Vicious Cycle goes into more detail about the tricks food companies get to pull that we need to be aware of to succeed on this diet. Kefir (rhymes with " the fear " not " reefer " ) is a cultured milk drink, similar to yogurt (the real kind is made with a culture called " kefir grains " (completely unrelated to cereal grains), but the store brands generally are not. That's another story, though.) Anyway, it's already fermented (bacteria (and yeasts in the case of real kefir, though probably not store-bought " kefir " ) have already digested the lactose), so you can't use it to make yogurt. Keifer is not the same as yogurt -- it has a number of things in it which are not recommended at the beginning of the diet. Only homemade yogurt which contains s. thermophilus, l. bulgaricus, and l. acidophilus and/or l. casei is SCD-legal. In addition, no commercially fermented product, be it keifer or yogurt, is SCD-legal.
