Cauliflower absorbs water like crazy. It's not a super crispy crust but mine was that " limp " either. I spread mine pretty thin too and flipped it over during cooking. Actually, this is where the pizza stone can be a help, as the stone draws water out of whatever you are baking on the bottom, and, of course, the top cooks and water goes away from the top as well.
