Like I said before in a previous post, the stores seem to only sell sharp cheddar. What brand is labeled just cheddar? I bought some made locally from an Amish farm but it was so strong and as my dear son (who works on a farm) so cheerfully communicated, "It tastes like poop". By that he meant the smell of poop:)Where do we find straight cheddar? Re: Re: sharp cheddar vs. cheddar The molds are stronger as a result of greater aging. So if you are reactive to mold, than stronger is probably worse. That's why DCCC is okay for you but other cheeses are not.
