I haven't had a chance to experiment with this yet, but I am wondering if it would be possible to make something like " zucchini leather " for a tortilla. In making fruit leathers, one purees the cooked fruit, pours it on parchment or a fruit leather sheet in the dehydrator and lets it dry completely, then peels it off the sheet. Great idea, Marilyn. I wonder if it'd work to add a little almond flour to make it more breadish and less veggie-ish. Well, I'd probably add a touch of nut flour, but some people might not be ready for it.
