You may also find a sympathetic caterer that will cook according to your specifications. If you tell us where you live, those of us who may know places near you can respond. And i have several friends who have recovered from cancer and other auto immune diseases this way. Cooked protein is very hard to digest. Hence why most people have to take HCL. Meat from grain fed animals have an abundance of e-coli but grass fed animals do not. I also have 2 yogurt makers and make a double batch at one time. It takes the same amount of time to make one batch as two. I make lots of hamburger patties, wrap them individually and freeze so I can grab one. I also freeze individual servings of chicken breasts, applesauce, and soup. Sometimes I will just scramble eggs and cook veggies for a quick meal. And my 10 year old does not want to eat what I eat so I feel like I am cooking twice or she is being neglected and living on hot dogs and eggs.. On those nights when I just can't do it any more..... I mix tuna and boiled egg with the SCD mayo.. I role it in a lettuse leaf with tomatoe and shreded cheese.. I also do this with canned chicken.. (read the labels, some have add ins some don't).. I have also done just scrabbled eggs and bacon with watermelon and cantalope... I also spend Sunday after church cooking 3 big meals.. I then divide them into a bunch of containers for my lunches during the day ( I work on the road) and also supper at night. My weekends aren't very restful but each night I don't feel guilty when I just heat up food and wash a few dishes.. (getting a dishwasher at the end of the week) I also spend sunday making a batch of yogart and cutting up the melons that I have.. I stay in the kitchen ALL DAY Sunday and usually pretty tired for Monday back to work... But at least I am not in the kitchen every night... Tonight I baked a cobbler.. I do small things in the evenings if I get home early enough... Organize the meals ahead .. It has helped me.. I freeze some and keep some for during the week.. If I have a bad day or don't cook enough on sunday to make the whole week.. I know I got back up in the freezer.. It is alot at first.. but finally feel like I am getting ahead with my meals.. I have my boyfriend cook a bunch of these on Sunday afternoon, and they last me until mid week. We also through a veggie on the grill, like asparagus. Easy and quick, and my man likes being the " grill master " around these parts, which works great for me. My other favorite easy meal right now is my own version of the chicken pot pie. I start off with 2 tablespoons butter (or oil) in a pot, then add garlic, chopped onion, chopped chicken breast, carrots, zucchini, fresh herbs, add a little water, let it simmer, add 1/3 cup yogurt, 1/2 cup almond flour, then some cheddar cheese (optional). Let this simmer until the veggies are soft, and it's done. It re-heats the next day really well, and is super yummy!!!! Total comfort food. The first night I made pot pies, I went to the trouble of making little pot-pie almond crusts using almond flour & butter. But it takes way too long to reheat the little pies in the oven. I also make batches of the almond flour blueberry muffins and banana muffins (muffin recipe in BTVC) on the weekends, so I can eat them at work during the week. And I alternate with making a fruit cobbler to take to work also. For breakfast it's pretty much a fruit & yogurt smoothie each day. My favorite meal of the day too I can imagine cooking for a family with two little ones can be pretty involved! I am just so glad you got your family on the diet. They sure are lucky to have a mom like you! I have 3 boys and I make them eat SCD when they are at home. For breakfast I try to make some sort of bread like muffins, biscuits, and such. I will make 18 muffins at once so that I can save some for the the next day or two. They also freeze well. You can also crumble the muffins and dry them in the oven until crispy and use like cereal on yogurt. Boil lots of eggs at one time and then warm for a few minutes in hot water before serving the next day or so. Extra eggs can also be used for quick egg salad. Same if making spaghetti sauce - make extra and freeze part (served over salad when doing the Akins diet). Make extra pizza crusts and freeze them -- and yes you can have pizza without cheese! Before SCD, I used to make pizza for my husband putting dollops of soy yogurt on top instead of cheese. Now, though I would use dollops of dripped SCD yogurt. Make hamburgers and eat with lettuce leaf 'buns' is another one. Yesterday I (somehow) managed to gain just an eentsy amount of extra energy that allowed me to make a meatloaf and cauliflower mashed potatoes. While it took more time and effort (not to mention dishes!) than I wanted, the " comfort " part of eating it was refreshing and much needed. I agree with all of you that said " make things in advance " . I guess starting out on the diet though, we've been more consumed with " what to eat " rather than " when to make it " . I did do an inventory last night though and realized that as long as I always have muffins, yogurt, fruit, and eggs on hand then breakfast won't ever be an issue. And (again, like your ideas), if I make a double portion at dinner then that can also be our lunch the next day. That just leaves me really with one " big " meal a day (dinner) to prepare, which isn't bad. I'm used to doing that pre-SCD! It was just the " 3 meals a day " was seriously wearing on me. So thank you all for all the ideas and advice --- it was very helpful and encouraging!!! Also, to , thank you for what you said! " they are so lucky to have a mom like you " ... I really needed to hear that encouragement! It often feels like I put out more than I get in return, which can get exhausting REAL quick!
