Guest guest Posted August 25, 2010 Report Share Posted August 25, 2010 Personally, I like making banana pancakes with a 2:1 ratio of eggs to bananas, and since my appetite has gotten a good deal better, using three eggs and 1 1/2 bananas and making two pancakes. This also seems to make them a manageable size (and thickness) while also giving me a good-sized breakfast. I've only just started cooking with nut flour (those muffins really are good!) so I didn't consider using that in the pancakes, but it sounds good if you're ready for it.
