I would try not to worry about it for now, and just focus on the fact that SCD is a healthy diet rich in nutritious, natural, unprocessed foods, and it works =) I think in some cases the context of the carbohydrate is just as important as the type. A starch found in a carrot is definitely going to be better for you and easier to digest than a starch in a piece of pasta. Cellulose is found in most of the vegetables and fruits we can eat; that’s why cooking helps as it denatures the cellulose structure somewhat, making it easier to digest. And starch is just another word for carbohydrate. What is important is the structure of that carbohydrate. Most of the foods we eat on SCD are monosaccharide. We avoid the complex carbohydrates, the polysaccharides (with a few exceptions, but we won’t go there right now…) So when we are researching a vegetable or fruit or other food, we have to check on the structure of the carbohydrate. In general, foods that are labeled starchy tend to be polysaccharide in structure, but not always…. Glycogen is a good thing, We want glycogen to be stored in our body to supply energy. It does get complicated when you start looking at metabolism [grin]. And then to further complicate things, some of us find we still can’t easily digest all of the foods permitted on SCD, even though they might be a simple carbohydrate (monosaccharide). And/or we have metabolism issues that prevent utilization of the nutrients we are consuming. So, very complicated… Kim M. I didn't think that vegetable did contains polysaccharides but I read at wikipedia some vegetables like peas and cabbage does. Because it contain cellulose and starch. And the same with glycogen from meat. Do I digest that??
