Acorn squash, butternut squash, and of course pumpkin have a decent amount of carbohydrates, and are pretty easy on the digestion. Not to mention they're in season! Just make sure you get them fresh and not canned, since canned goods very often have illegal ingredients hidden in them, even if the labels say otherwise. Of course fruits are good: applesauce, pear sauce, ripe bananas (I like to mix three eggs with a banana and a half, then fry the mixture in ghee to make banana pancakes) are good. Honey and diluted fruit juice, to the extent that they can tolerate them, are certainly good in a pinch for calories. Since calories also come from fat, and children need a good amount of quality fat to grow well, don't skimp on ghee, butter, olive oil, or whatever else you're using to cook your food. Guest guest Posted October 11, 2010 Report Share Posted October 11, 2010 I agree with on the squashes. I have just found squash " fries " and cannot seem to make enough! My husband who does not have GI problems and loves his potato chips and french fries can't seem to get enough either. I think I need to make 2 batches tonight (craving something salty). Its easy too, just peel a butternut squash good and well until you reach the bright orange flesh, scoop out the seeds, and cube it up, toss with olive oil and salt and pepper and heat for about 40 min at 400-425 or to your desired texture. My husband likes them even more " toasted " but neither one of us can wait for them that long!
