I use a packet of onion soup mix, lots of fresh garlic and water and let it cook all day on low. It is very tender and very tasty. Crock Pot Roast: Rub 3 to 4 pound rump roast with 1 t. salt and 1/2 t. garlic powder. Place in crock pot. Cover with one can diced tomatoes (seasoned if you wish), 2 onions sliced and 2 crushed garlic cloves. Cook on hi approx. 8 hours. Crock Pot Italian Beef: 3 to 4 pound rump roast, 8 oz. tomato sauce, 2-1/2 c. water, 1 t. salt, 1 t. pepper, 1 t. parsley, 1 t. garlic powder, 2 t. Italian seasoning, dash Worcestershire sauce, dash soy sauce, 1 envelope Good Season Dressing mix. Place all in crock and cook on high for about 8 hours. The meat come out so tender and moist and you could substitute probably any cut of beef in each recipe. If you want a little grave, just thicken the juices. YUM! Another favorite recipe is Stroganoff. The basic sauce is 12 oz. sour cream, 1 can cream of mushroom soup and 1 package dry onion soup mix. To this you could add boneless chicken, beef cubes, meat balls etc. Cook 6 hours on high or until done. Tasty and I don't worry too much about any carbs in the gravy because for me it just moistens the meat a bit. Rev. Guest guest Posted January 27, 2004 Report Share Posted January 27, 2004 I'm on a few crockpot yahoo groups, but here are some recipes I've gotten from the different groups, and one of my own favs. Here is my family's favorite: Slow Cooker Roast Beef 3 pounds beef chuck roast 1/3 cup soy sauce 1 (1 ounce) package dry onion soup mix 2 teaspoons freshly ground black pepper Pour the soy sauce and dry onion soup mix into the slow cooker. Mix well. Place chuck roast into slow cooker. Add water until the top 1/2 inch of the roast is not covered. Add the fresh ground pepper over the top. Cover and cook on low for 22 hours. (yes, 22 hours) Makes 6 servings Chicken Provencal 2 lbs skinless, boneless chicken thighs, each cut into quarters 2 medium red peppers, cut into 1/4-inch thick slices 1 onion, thinly sliced 1 28-oz can plum tomatoes, drained 3 cloves garlic, minced 1/4 tsp salt 1/4 tsp thyme 1/4 tsp fennel seeds, crushed 3 strips orange peel 1/2 cup fresh basil leaves, chopped Place all ingredients in the slow cooker, except for the basil leaves. Mix thoroughly. Cover; cook on Low for 7 to 9 hours or on high for 3 to 4 hours. Sprinkle with fresh basil leaves to serve. Here's a sample recipe with 3 net carbs per serving: @@@@@ Thyme and Garlic Chicken Breasts 6 cloves garlic, minced 1 1/2 teaspoons dried thyme, crushed 3 to 4 pounds whole chicken breasts (with bone), halved and skinned 1/4 cup orange juice 1 tablespoon balsamic vinegar Sprinkle garlic and thyme over chicken. Place chicken pieces in 3 1/2- or 4-quart slow cooker. Pour orange juice and vinegar over chicken. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. Remove chicken from cooker; cover with foil to keep warm. Skim off fat from cooking juices. Strain juices into saucepan. Bring to boiling; reduce heat. Boil gently, uncovered, about 10 minutes or until reduced to 1 cup. Pass juices with chicken. Makes 6 to 8 servings. Beef & Black Bean Stew 2 pounds. ground beef 2 large cloves garlic, minced 1 medium onion, chopped 1 large (28-oz.) can tomatoes, chopped 1 cup picante sauce 1 tsp. ground cumin Salt and pepper, to taste 1 can Mexicorn, about 11oz, drained 1 (15-oz.) can black beans, rinsed and drained 1 bunch green onions, with 3 inches of tops, thinly sliced 1 tablespoon chopped fresh cilantro or flat-leaf parsley, optional In a large skillet, brown ground beef with garlic and onion; drain and transfer to the crockpot. Add tomatoes, picante sauce, cumin, salt and pepper, corn, and black beans. Cook on low 6 to 8 hours or on high for 3 to 4 hours. Add green onions and cilantro, if used, during the last hour of cooking. Top with grated cheese, guacamole, or sour cream, and serve with tortilla chips or cornbread. Makes 6-8 servings. When I am feeling up to a spicier version..........a few cruched red peppers. This makes a VERY tasty shredded beef sandwich too if you cook it to the point of it falling apart. ENJOY!!
