So I had to share. 4 medium (4-inch) portobello mushrooms 1 cup almond meal 1/4 grated parmesan cheese 1/4 tsp salt 1/8 tsp black pepper 3 eggs 2-3 tbsp olive oil, if frying Cut mushrooms into long slices, 1/2 inch thick. Mix almond meal with cheese, salt & pepper. break eggs into a pie pan or similar bowl, and beat until smooth. dip mushroom into egg, them press into nut mixture on both sides to cover. At this point, the recipe says to heat a large skillet, add oil, and cook in oil on each side about 5 minutes until golden all over. I did that to some, but also baked some of mine. I actually think the baked ones tasted better. DH liked the fried ones better, but I will be baking them all in the future since it's easier and healthier. I just put the slices on a cookie sheet (on parchment paper) and baked at 350 until golden. Not sure how long - I was distracted by a 3-year old. I will definately be making these again soon.
