I grew up with a mother that was constantly pushing it on me and still to this day, have to force myself to eat it on holidays with her. BUT... I do recognize the nutritional importance of it on this diet. I have been really sick these past two weeks and decided to suck it up and just make a pot. Then, my age old dilemma... what to do with all of those carrots. I love raw carrots (still can't digest them), but really dislike ones that are mushy and overcooked from the soup. Well, I had made a batch of Marilyn's pickled beets this week and am in love with the marinade!!! (I've been drinking it, it's so good). So I threw my soup carrots into a fresh batch of marinade and voilá! Palatable carrot. Yum.
