There is a microbial culture in it. Is this legal? My other question is: Is goat cheese legal? Also, is aged cow cheese always better for SCDers than regular non-aged cheese? Would we have to be sure that the bacteria were legal, like for yogurt starter?My other question is: Is goat cheese legal? Also, is aged cow cheese always better for SCDers than regular non-aged cheese? Goat cheese is good, as long as it is aged long enough. I think 30 days. And yes on the aged cheese; I don't think there's any non-aged cheese that is SCD legal because it's the aging that lets the bacteria eat all the lactose. Fresh cheeses like feta (can be used after 6 months of no symptoms) and mozzarella (always illegal) are not legal. Flavored cheeses are usually not legal either. Sharp cheddar is an occasional cheese. Here is what the Legal/Illegal List on the BTVC site says: Cheese - If a cheese is not a processed cheese (manufactured) but is a cheese that has had a bacterial culture involved with its production and is aged at least 30 days. Elaine says its OK. The legal/illegal list has a lot of the cheeses listed on it. Sorry, I'm not sure about cultured butter either.
