Hi Rani,

I am pretty sure 'turai' also called 'tori' or ridge gourd in English is legal.

It is very low in carbs, is very watery and soft when cooked, very easy on the

stomach when it is upset. It is in the same family as 'lauki' also known as

'bottle gourd' a summer squash. In some ways I prefer the ridge gourd to bottle

gourd when wanting to give the stomach a rest.

However do note that 'bitter gourd' (Karela in hindi) was not approved by

Elaine.

You need to peel the ridge gourd (very well, no greens left), then slice into

rounds, give seasoning to the oil, add the slices of the vegetable, don't add

any water - it has enough water on its own, cover and simmer about 15 - 20

minutes till softened. You can add cumin powder, turmeric, a little tomato

puree, salt as the seasoning. I like to add 'ajwain' (similar to caraway seeds),

but you may want to wait on that for your little girl, unless you are able to

strain out the seeds.

I pretty much live on 'lauki', 'turai', and 'tinda' when I visit India - can't

seem to get enough of them!
