Can't remember whose recipe this was - Marilyn's maybe?? Anyway

Preheat oven to around 350

Thinly slice eggplant (can peal if needed) (I use a slicer to get it pretty thin). Dip each slice into a beaten egg then dip in an almond flour/oregano/s & p mix(any spices will do). Spray cookie sheet w/olive oil and place slices in single layer. Spray top w/more olive oil spray. Bake until bottoms are browned, flip and continue baking until both sides are browned. When baked I love to dip these in an onion dip. Saute 1 onion in 2 T olive oil and 2 T vinegar until browned. Let cool. Add 1 cup yogurt
