I traveled to WVa this weekend so most of this was packed: Sat. Breakfast - boiled eggs, almond butter bread toasted w/strawberry jam, juice Snack - Smoothie and 2 cashew nut butter balls Lunch - Leftover pizza, peas, carrots and guacamole, cookie Dinner - Hamburger, peas, watermelon, deviled eggs, crackers and guacamole Dessert - Vanilla Cupcake Snack - Yogurt with strawberries, bananas and pecans Sunday Breakfast - Egg, Sausage and Cheese Sandwich on bread rounds, juice Lunch - BLT wrap on crepe, eggplant "chips" (dipped in egg , alm. flour/oregano and baked) carrots, cookie Snack - Yogurt with strawberries, bananas and pecans and a date stuffed with coconut butter (YUM!!) Dinner - Pork Tenderloin, butternut squash w/oregano, and grilled zucchini, grape juice and sparkling water Dessert - Strawberry ice cream Ya know - when you type it out it sometimes sounds fancy People at the party felt sorry for me - I didn't want to mention what might be in the hotdogs and cake icing they just ate! Meat Loaf Here's the meat loaf recipe from the Dr. Atkins Diet book, minus worcestershire. I like it a lot better than the veggi recipe. Ketchup baked on the top makes it really yummy... 3 lb ground meat 3 eggs 3 gloves garlic, mashed 3 tbl cilantro or Italian parsley 6 oz sharp cheddar cheese, shredded salt to taste Preheat oven to 375 degrees F In large bowl, thoroughly mix all ingredients. Place meat into oiled loaf pan & bake 45 min to 1 hour. It is sooo goood too me. While it was baking, I made homemade ketchup on the stove. I used 3 eleven oz. cans of campbell's tomato juice and added 3 tbl spoons of vinegar and salt to taste. you have to stir it while it cooks or it will splatter. I cooked it on medium heat. but if you have a splatter screen and put on top you don't have to stir and can leave it unattended. cook until it is thick. It took me about an hour as long as the meatloaf. It WILL get thick like ketchup. Don't give up. Then you add honey to sweeten it to taste. I prolly put in more than a 1/4 a cup, but only after it is through cooking. Then I pulled out the meatloaf and poured some on top and cooked for 5 min. I took it out and served it with ketchup on the side and green beans and toasted almond bread from the book. p.s.
