I'd like to try beans. What would be the best bean type to start with and how do I best prepare it? I'm wanting to make a Jambalaya with beans instead of rice. Try a small amount and wait a few days. I could tolerate baby lima beans easily. That was it for a long time except one meal with pureed black beans (like refried beans) but not often. Some try lentils or split peas--which I wouldn't go near ;-). Definitely have to test it. I don't, myself, and neither does my husband. But if you like them, you might want to try them. Some people like split peas. See above. <grin> I did pretty well with navy pea beans (after I quit mistaking Great Northerns for navy peas beans, that is!) What I've done best with is split red lentils and what I call " brown " lentils -- they're actually slightly greenish.
