It is usually safer to purchase peanuts in the shell and do your own shelling. Here’s the reason. Many processors add a few ingredients to the shelled peanuts to keep them from developing mold, or to add flavorings, or to keep them loose and dry (like cornstarch). Nut mixtures that include peanuts nearly always have illegals added to them. Sometimes these unwelcome ingredients are added to the brine (salt) mixture if you purchased shelled and salted peanuts. Quite often these extra ingredients are not listed on the packaging label. Processing aids are often used (cornstarch again) even in shelling machinery, and they don’t have to be included. I make my own peanut butter, and used to purchase roasted, in-the-shell peanuts or just plain in-the-shell peanut and do my own roasting. But after talking with one of the sources I found I liked the best, I learned not only did they do their own shelling, and that they didn’t add anything after the shelling process, but they were also the grower. So I began to purchase roasted, shelled peanuts from them. I proceeded very cautiously at first, just in case, but haven’t had any difficulties with this source. But I know this isn’t true of all sources, and I won’t be surprised if something changes with this business in the future. I may end up going back to in-the-shell peanuts and do my own shelling. So it is safest to purchase raw peanuts in the shell, or roasted in the shell, and do your own shelling and processing. Peanuts are considered an advanced food. I happened to tolerate peanut butter within the first 2 months on SCD, in tiny amounts – but I can’t touch nut butters or any other legumes. Some do well with peanuts and peanut butter, others have problems. So proceed cautiously. Kim M.
