So perhaps it was that using oil didn't give it enough to hold together with. When I think I can stand a few spare calories I will try the almond cookies your way and I'm sure they will be delicious! Re: cookies without eggs. Cookie batter DOES NOT need eggs. If it's got enough fat in it the almond flour holds together just fine. I made up a cookie recipe of just almond flour, butter and almond extract (and a pinch of salt), and as much honey as you like, to taste. They're dynamite. And they hold together just fine.
