I have seen quite a bit of improvement in the last 6 weeks and yet there are still times when I'm having symptoms - how long might it take to be able tok know if a particular symptom is from some failure of the diet or if it is just a " not yet healed " symptom? I've been very strictly not eating gluten and sticking to very clearly fresh or GF foods. I thought that some of it might be from an accidental ingestion of " modified food starch " but I heard at the Stanford conference that my statisticial chances of the modified food starch in the US being wheat are very low, so now I'm confused. Any thoughts on this? Also, is there anyone on this list who is pursuing the Paleodiet or some form of " pre-wheat agriculture " diet? I'm curious about that and about how so many of the top 10 problem foods are recent (evolutionarily speaking) the introduction to the human diet or at least to the " northern European fogbelt peoples " diet.
