Guest guest Posted August 29, 2010 Report Share Posted August 29, 2010 Broccoli (or Cauliflower) & Cheese Soup Preparation: 5 minutes - Processing: 5-6 minutes - Yield: 2 cups 1/2 cup dry curd cottage cheese 1/2 cup of water 1/3 cup shredded cheddar cheese 1 cup chopped fresh or frozen broccoli (or cauliflower) florets, steamed 1 teaspoon diced onion 2 teaspoons coconut flour (for thickener) 1 dash of salt Place all ingredients into Vitamix container in the order listed and secure lid. Select Variable 1. Turn machine on and quickly increase speed to Variable 10, then to High. Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Optional: Steam and reserve an extra cup of florets to garnish the top of your finished soup when serving. Adapted from Vitamix " Whole Food Recipes " Both of these soups are fantastic! So creamy, I can't believe how the Vitamix obliterates the veggies. The broccoli soup looks more like avocado soup :-). We tried upping the broccoli to 1.5 cups once, but the bird (not a fan of broccoli) rejected it at that point. But if you are a fan of broccoli/cauliflower, feel free to add more :-).
