She once ate 2 bowls of cereal thinking it was GF and absolutely no reaction to it outwardly. However, at one point my flour source (I do all the baking for her) wasn't pure, so after months of baked stuff from contaminated flour, she started belly aches again. So with her I find she shows symptoms after months of slight amounts of gluten and not if she has something once. Guest guest Posted July 27, 2005 Report Share Posted July 27, 2005 I react within a time frame of 1 to 7 days, I think - which is to say that I think the thing that I'm now reacting to got eaten 3 days ago. But my first reaction may just be " snippiness " or brain fog or some other non-obvious sign. Usually the first one I notice is farting - that makes me start looking for other reactions and for what I might have eaten. In this current case, we went out to a sushi restaurant four days ago. No, I did not use the soy sauce or have any sauced sushi. I asked if they put anything in the sushi rice besides seasoned rice vinegar and the sushi chef said No. But I think he was wrong, because what else could it have been? Well, perhaps cross contamination... Damn! I so like going out to restaurants. This is the one part of this that I'm having so much trouble with. For many years my symptoms were misdiagnosed, but it wasn't until it became debilating that a diagnosis was forthcoming. Celiac disease has cumulative affects, so even if you aren't having immediate or severe symptoms, the long impact can be severe. I do not necessarily have immediate symptoms if some how I have been exposed (through eating something with unidentified or misidentified ingredients, or some other exposure as dog food or cat food, which by the way I don't eat, but sometimes touch). However, the anti-gliadin "trigger" or "switch" is then turned on again and I will have symptoms for a period of time until my body decides that there is no longer an "enemy" on board in my cells. So, it is my theory that when and how your body reacts is only a partial indication that there is a problem, since long after ingestion of even a infintessimal amount of gluten, your body can reacting to it. The gluten exposure messes up our intestines and makes us more susceptible to other foods, too. I know I did not get any gluten and yet wound up in the hospital with what my internist saw as heart-attack symptoms. ( pressure on my chest, difficulty breathing and extreme weakness after a 20 minute walk). My heart & lungs checked out OK, so I went on a very restricted diet and the symptoms disappeared. I am now taking a one hour brisk walk every day with no fatigue. I am gradually adding foods one at a time and have reacted badly to organic bananas, melons & chamomile tea. So I don't think it was hidden gluten that I reacted to, but I think gluten was the culprit that has made me susceptible to other foods. Now I am waiting for the results of 113 foods I had tested at York Laboratories. Will pass on the results once they come. Good luck to all of you. The best thing I can suggest is to keep notes about what you experience and when; over time as you keep track of your experiences you will see a pattern emerge. Even if you aren't sure you have had gluten or if a particular symptom is related to CD, write down what the symptoms are and what/where you have eaten in the last few days that is different or unusual. Reaction to gluten can also change over time. Some people react more severely to gluten the longer they are gluten-free. It may be that as you observe your reactions to accidental gluten you will find that problems you never connected to celiac disease are actually the result of eating gluten. Some of the reactions my family experiences are tiredness, reduced immune function (getting colds), emotional (loss of control, especially for the kids; fuzzy mindedness); diarrhea and bloating; vomiting; itching. They may experience one or more of these symptoms when accidentally exposed to gluten. The time frame varies from hours to days; when my son was recently off gluten, he would get an itchy bottom immediately after eating anything with gluten; this reaction has faded over time.
